Recipe: Strawberry, feta and rocket salad

Our kids love going strawberry picking, so last week when the sun was shining, we took them to Easter Anguston. The place has gotten a slight upgrade since our visit last year - you now pay £5 for an empty punnet and you may fill it with as many strawberries as you like. There is also an additional play area next to the animal enclosures, with diggers and sandpits as well as mini tractors for the kids to drive around. Since we plucked lots of strawberries, I made a nice summer's salad for lunch - strawberry, feta and rocket salad. Juicy strawberries with a tangy dressing and creamy cheese - absolutely lovely! Try this the next time you get your hands on some strawberries.

Strawberry, feta and rocket salad
Recipe by Baby Sumo
Preparation time: 2-3 minutes
Serves 2


Ingredients
A large handful wild rocket leaves
15-20 strawberries, washed and sliced
50g feta cheese
4-5 basil leaves, thinly sliced

For the dressing
4 tsp extra virgin olive oil
2 tsp white balsamic vinegar

1. To make the dressing, place oil and vinegar in a small bowl and whisk to mix well.

2. In a larger bowl, place the strawberries and rocket leaves and toss with the dressing. Crumble the feta cheese all over and garnish with basil. Serve.
